mango mint salad

Serves 1

So simple yet spectacular. Make this when the mango’s perfume can’t be missed, and not a day before.

3 large lettuce leaves
1 tablespoon flax oil
1 teaspoon apple cider vinegar
1/2 ripe mango, peeled and pitted
1/4 cup cucumber, halved and thinly sliced
Handful mixed sprouts
Handful hazelnuts, chopped
A few sprigs fresh mint, torn

Arrange the lettuce leaves on a plate. Whisk the oil and vinegar together, then toss with remaining ingredients and arrange atop the leaves.
